The highlight, for the drinks-minded, is a gin tower that houses a whopping 1,100-bottle collection. Banker-turned-bartender Sim Sze Wei will stir a house Martini, for which champagne vinegar turns out to be an inspired ingredient. Or you can choose a gin by the decade, stretching back to the 1910s, and he will pair it with a vintage vermouth for a taste of cocktail history. The rarest gins and whiskies came with the building. They were part of the collection of the late CS Hwang, the Hong Kong property mogul who built the premises. He also had the seeds of the bar’s extraordinary champagne collection, from prestige labels to shipwreck bottles. With cuisine from a chef who’s done stints at the Fat Duck, Alinea and Narisawa, Atlas is an unapologetically opulent drinking and dining destination."
