"Chris Moore’s Coupette made a dramatic entrance to the scene in 2017, earning the Best New Opening Award, sponsored by Thomas Henry, at The World's 50 Best Bars 2018. It seemed no matter what your taste in bars – experimental or traditional – it found a way to impress. Moore’s background is the Savoy, so the classical hallmarks are evident, with five-star-standard service and champagne aplenty. Yet there are other inspirations at this neighbourhood Bethnal Green bar. Calvados has a heavy influence and gave birth to Apples – simply apple juice and the French apple brandy. But, of course, nothing’s that simple when it comes to elite bars. The apples that are pressed and filtered rotate monthly to showcase different varieties, as does the calvados. If that sounds inconsistent, it’s meant to be. Moore believes drinks should change with the vagaries of vintage and season. It’s the same for his Truffled Negroni – another favourite that might have been the bar’s signature serve, had it not been for the runaway success of the Champagne Piña Colada. Sophisticated yet playful, it’s been the cocktail to drink over the past year."
