"Since opening in 2011, this agave-focused bar hidden behind a teeny taqueria continues influencing Parisian palates and launching cocktail careers for some of the city’s best bartenders. It empowers its multicultural team with both bar training and education on the Latin American culture behind its bottles of tequila, mezcal and more. You don’t just throw back a shot here but, rather, sink into a rich experience celebrating something bigger than the glass. As the first bar coming from the Quixotic Projects group, Candelaria adheres to its increasingly eco-friendly ethos. Skipping non-compostable straws and napkins and reducing the amount of menu printing are just a couple of the ways it strives for sustainability. The bar also aims for gender balance and, with its newest head bartender, Cristina Hernandez, the team is an even 50/50 split. Drinking at Candelaria doesn’t just taste great, it feels smart too."
